I had the same problem in my car. I took the gauges out and tightend the nut on the back of the gauge panel that held the temp gauge in. No more bouncing.
The car hasn't overheated since I last reported a problem. The needle bounces still and sometimes stick in the red. I will make sure all the wires are tight to the gauges when I go and switch dashes this summer.

Try this, some times when you overheat your temp seding unit frys. Try replacing the temp sending unit and see if that helps, it fixed my gauge problems.
